We have recently visited the founder house of Underberg in Rheinberg – Germany. Obviously we couldn’t leave this wonderful place without trying the mixing capabilities of this historical product. This is how we created the Saf Run cocktail!
Underberg was created in 1846 by Hubert Underberg. It is a natural herbal digestive that has 44% alcohol by volume and it is made from a choice of the finest aromatic herbs and botanicals from 43 countries. It is available at big super markets and the gourmet provisions stores. The label – on the small unmistakable bottle of 20 ml – suggests Underberg “After a Good Meal”. We tried a lot of Underberg portions during out stay in Rheinberg and we were definitely convinced about the soothing power of this “magic liquid”. Obviously, we couldn’t leave this wonderful place without trying the mixing capabilities of this historical product and we have created two signature cocktails with Underberg. The Saf Run cocktail and the Mantequilla Tiki cocktail.
The Saf Run cocktail kills a number of birds with one stone. In particular, it is very well-balanced with a lot of contrasting flavors and long finish. This is an amazingly delicious and delicate short drink cocktail with great floral and herbal notes. The lime’s acidity balances perfectly the sweetness of the rose syrup while Underberg marries in a beautiful way with the Saffron gin. Saf Run
- 1 barspoon Underberg
- 50 ml Gabriel Boudier Saffron Gin
- 30 ml fresh lime juice
- 25 ml rose syrup (we have used Meneau but you could also use Monin Rose syrup)
Pour all the liquids into a mixing glass. Shake all ingredients with ice and double strain into a chilled cocktail glass. Garnish with a dried rosebud.
