Underberg and Tiki… Who would have thought? The Mantequilla cocktail is great for bringing the tropical sun into your winter-worn home.  The pineapple essence lends itself to warm summer nights and Underberg is sure to spruce up this tropical drink!

Underberg was created in 1846 by Hubert Underberg. It is a natural herbal digestive that has 44% alcohol by volume and it is made from a choice of the finest aromatic herbs and botanicals from 43 countries. It is available at big super markets and the gourmet provisions stores. The label – on the small unmistakable bottle of 20 ml – suggests Underberg “After a Good Meal”. We tried a lot of Underberg portions during out stay in Rheinberg and we were definitely convinced about the soothing power of this “magic liquid”. Obviously, we couldn’t leave this wonderful place without trying the mixing capabilities of this historical product and we have created two signature cocktails with Underberg. The Saf Run cocktail and the Mantequilla.

As you may have read before, a Tiki drink is, usually, heavily dominated by aged or spiced rums, whose impressive characteristics hardly disappear and they love being paired with bitters and fresh juices of lime, pineapple or grapefruit. Quality syrups, tasty liqueurs and hints of spices like clove & vanilla, are only a few common Tiki components. The Mantequilla is a highly complex, in flavors,  cocktail which could be described as a Tiki cocktail. It is balanced with a lot of contrasting flavors. I have added one barspoon of Underberg, instead of any other bitter, which gives some extraordinary herbal and spicy notes to the cocktail. I have also borrowed the vanilla hints from the bourbon and I have given some extra flavor boost by adding Skinos spirit.  Make a Mantequilla cocktail and feel the warm sun on your face as you imbibe the first taste! Here is the recipe:

Mantequilla

  •  1   barspoon Underberg
  • 40 ml Angostura Rum 1919
  • 10 ml Four Roses bourbon whiskey
  • 30 ml Skinos mastiha spirit
  • 40 ml organic pineapple juice
  • 10 ml passion fruit syrup
  • 15 ml fresh lime juice

Pour all the ingredients into a mixing glass. Shake all ingredients with plenty of ice and strain into a ceramic Tiki mug filled with crushed ice. Don’t forget garnishing the Mantequilla cocktail with a pineapple ring* which adds a more tropical character to it. Pour a few dashes of Underberg on the surface of the pineapple ring and pass a straw through the ring’s hole.
