Demerara is a historical region in the Guianas on the north coast of South America which is now part of the country of Guyana. It was a Dutch colony until 1815 and a county of British Guiana from 1838 to 1958, located at the lower shores of the Demerara River. The story of Demerara Distillers started in 1670 when every sugar estate had its own rum still, and a group of sugar cane producers formed an exporting co-operative. I made the Guara Wara cocktail for the first time in one of my attempts to explore the mixing capabilities of the El Dorado spiced rum. I came up with a very simple recipe which included only three ingredients: spiced rum, passion fruit syrup and some fresh lime juice. It was pretty delicious, but nothing innovative, huh? But it wasn’t until I added a large piece of frozen coconut water that the drink became so interestingly fuzzy. I used Dr. Antonio Martins coconut water which is pure juice from young green coconuts. This coconut water is really precious, delicious and healthy. Furthermore the coconut water freezes very easily and the ice that you get lasts surprisingly too much. I must confess that the Guara Wara cocktail is an amazingly genius cocktail, because every sip is different from the previous one, since the coconut ice dilutes more, while the rest of the drink is being reduced. Read the recipe below, make one (or two) for yourself and tell me your opinion about this.
- 60 ml El Dorado Spiced Rum
- 20 ml lime
- 20 ml passion fruit syrup
- one large coconut water ice-cube
Pour all the liquids into a mixing glass, apart from the 5 cm coconut water ice-cube. Shake all ingredients with -normal- ice and strain into a double old-fashioned glass with a large ice-cube made of the coconut water. Garnish with a leaf of spearmint. Enjoy your drink.
