Charris Darras, creator of the brilliant Clandestino cocktail, shares with us his thoughts on BACARDÍ Legacy Global Cocktail Competition 2015.

“BACARDÍ Legacy is a global worldwide competition and I was one of almost 100 bartenders enrolled -last September- and qualified among 20 professionals who competed in the Greek semifinal. I am very happy that i succeeded to the final four. But that was only the beginning: I have to keep on trying hard to have the potential for the best place in 16 February , the day of the Greek final”, says Charris Darras, head bartender of Mona’s cocktail bar in Chalandri, Athens.

“So far we have seen many competitions that ask  for the very best cocktail. BACARDÍ Legacy, asks for something more: It is very important for the winning cocktail to have the abilility to become a part of BACARDÍ’s history, as happened with the Daiquiri for example”, says Harris, who was based on this premise to create his cocktail, the Clandestino. “Clandestino is inspired by the homonymous song of Manu Chao in which I found many similarities with the story of BACARDÍ family that was forced to leave Cuba during 1960. The family lost their business and home but managed to survive and started again from scratch”, unfolds Charris Darras and adds that his presentation is clearly influenced by the idea of what one would carry with him in a similar case. “The Clandestino is a recipe that will remind you of the past and will accompany you in the future”, said Charis in his presentation during the Greek semifinal.

“Till now, I have done several actions and events to promote the Clandestino cocktail, like the two great parties at the Bank Job cocktail bar and Mona’s. I realize that the Clandestino is being adored by imbibers, which is a great reward and gives me strength to go further” and continues: “I was not limited to …” domestic “actions: I traveled to London and worked in agaveria El Nivel, a beautiful new bar – restaurant in Covent Garden, specialized in agave spirits (tequilas, mezcals, bacanoras, sotols, and raicillas) and Mexican cuisine. Obviously, the patrons there had many expectations and it was very encouraging to see them enjoying my cocktail and giving me such a positive feedback. I had, also, the honor to drink the Clandestino cocktail made by Simone Caporale!” describes Darras. “Next, I flew to Germany in order to find myself working for the customers of Zephyr cocktail bar, awarded -by BCB- as the best cocktail list among German bars, 2014” adds joyous Charris.

Charris Darras told us that he is working in, a new ambitious implementation in Chalandri, Athens and we have great expectations about this project. Till then, read Darra’s recipe:

Clandestino cocktail

Clandestino Cocktail

  • 60 ml BACARDÍ Superior Rum
  • 15 ml St. Germain elderflower liquer
  • 20 ml freshly pressed pineapple juice
  • 25 ml fresh lime juice
  • 15 ml  champagne-honey vinegar
  • 2 dashes Worcestershire sauce

Combine all ingredients in a mixing glass. Fill the shaker with plenty of ice and shake until chilled. Double strain into a chilled cocktail glass. Garnish with a dried lime wheel and a mint sprig.
